Salmon Risoni Salad

Simply follow the steps below:

  1. Cook the risoni following the packet instructions. Drain, toss through 2 Tbsp olive oil and set aside to cool.
  2. To make the pesto, place the basil Parmesan cheese and pine nuts in a blender. Blitz to combine.  Add the lemon juice and 1/3 cup olive oil and blitz until smooth.
  3. In a large bowl combine the risoni, cherry tomatoes and spinach. Toss through the pesto. Finally add the smoked salmon or trout and toss to combine.
  4. Serve with a side of crusty garlic bread.

  • 1 cup Risoni
  • 2Tbsp olive oil
  • 1 cup basil eaves
  • 1/2 cup grated parmesan cheese
  • 2 Tbsp pine nuts, toasted
  • 1/3 cup olive oil
  • 2 Tbsp lemon juice
  • 250g cherry tomatoes, halved
  • 1 cup baby spinach leaves
  • 2 cans smoked salmon, drained or 700gm fresh smoked trout
