Salmon Risoni Salad
Simply follow the steps below:
- Cook the risoni following the packet instructions. Drain, toss through 2 Tbsp olive oil and set aside to cool.
- To make the pesto, place the basil Parmesan cheese and pine nuts in a blender. Blitz to combine. Add the lemon juice and 1/3 cup olive oil and blitz until smooth.
- In a large bowl combine the risoni, cherry tomatoes and spinach. Toss through the pesto. Finally add the smoked salmon or trout and toss to combine.
- Serve with a side of crusty garlic bread.
