Salmon Triangle puffs
Simply follow the steps below:
- Preheat oven to 200 degrees C and line an oven tray with baking paper.
- Place the first 6 ingredients in a bowl and mix to combine. Season with fresh cracked pepper
- Cut each sheet of pastry into four squares. Place 1 Tbsp of mixture on one side of the pastry square. Brush the edges with a little water and fold the pastry over the filling pressing the edges together.
- Place the triangles on the lined oven tray, brush with the egg wash and sprinkle with poppy seeds if using.
- Bake for 12 minutes or until puffy and golden.
- Serve with a dollop of sour cream.

- 2 Tbsp red onion - finely diced
- 3/4 cup corn kernels
- 3Tbsp chopped spinach
- 1 cup grated mozzarella cheese
- 2Tbsp sweet chilli sauce - adjust to your liking
- Fresh cracked pepper
- 2 sheets flaky puff pastry
- 1 egg, lightly beaten
- 1 tsp Poppy seeds (optional)
