Summertime Ceviche

Simply follow the steps below:

1 – Marinate the raw fish in the lemon juice and salt over night.

2 – Drain the fish and add to a bowl with the tomato, cucumber, onion, chilli, coconut milk and coriander if using. Season with salt and pepper and mix to combine.
3 – If you’re adding avocado into your ceviche add this just before serving.

4 – Serve the ceviche on a bed of shredded lettuce with fresh tortilla chips.

Ingredients list

  • 2 cups fresh raw fish, diced (snapper or kingfish work well in this recipe)
  • 1/2 cup lemon or lime juice
  • 1/4-1/2 tsp salt
  • 1/2 cucumber peeled and diced
  • 2 tomatoes, cored and diced
  • 1/4-1/2 red onion, finely diced
  • 1 chilli with seeds removed, finely diced or you can use a good pinch of dried chilli
  • 1/4-1/2 cup coconut milk
  • Handful of fresh corriander, chopped (optional)
  • 1 avocado just ripe, diced (optional)
